Sweet & Savory Glazed Kohlrabi and Carrots with a Balsamic Finish!
This vibrant Glazed Kohlrabi & Carrots dish is a simple, nutrient-rich dish with a ton of flavor. Gently simmered until tender, the carrots and kohlrabi are coated in a naturally sweet maple-balsamic glaze and finished with fresh parsley for a pop of brightness. It’s oil-free, easy to make, and perfect for adding a little plant-based elegance to your plate whether for a weeknight dinner or a holiday spread.
Ingredients
2 pounds Carrots, cubed
2 tbsp Maple Syrup
2 tbsp Balsamic Vinegar
2 tbsp fresh Parsley, chopped
2 cups Kohlrabi, cut into 1-inch pieces
½-1 cup Water or more if needed to cook
Directions
Cut carrots into cubes, triangles or bite-sized chunks and add to pot with water.
Cover pot and cook over medium heat for about 10-12 minutes.
When carrots are about halfway cooked, add Kohlrabi, more water if needed, and maple syrup.
Cover until cooked fully cooked.
Remove from heat and stir in parsley and balsamic.
Serve and enjoy!
