Sweet & Savory Glazed Kohlrabi and Carrots with a Balsamic Finish!

This vibrant Glazed Kohlrabi & Carrots dish is a simple, nutrient-rich dish with a ton of flavor. Gently simmered until tender, the carrots and kohlrabi are coated in a naturally sweet maple-balsamic glaze and finished with fresh parsley for a pop of brightness. It’s oil-free, easy to make, and perfect for adding a little plant-based elegance to your plate whether for a weeknight dinner or a holiday spread.

Ingredients

  • 2 pounds Carrots, cubed 

  • 2 tbsp Maple Syrup

  • 2 tbsp Balsamic Vinegar

  • 2 tbsp fresh Parsley, chopped

  • 2 cups Kohlrabi, cut into 1-inch pieces

  • ½-1  cup Water or more if needed to cook

Directions

  • Cut carrots into cubes, triangles or bite-sized chunks and add to pot with water.

  • Cover pot and cook over medium heat for about 10-12 minutes.

  • When carrots are about halfway cooked, add Kohlrabi, more water if needed, and maple syrup.

  • Cover until cooked fully cooked.

  • Remove from heat and stir in parsley and balsamic.

  • Serve and enjoy!
