Glazed Kohlrabi and Carrots
A delicious twist on a simple side dish.
If you’ve never cooked with kohlrabi before, this is a wonderful place to start. As it cooks, it becomes tender and just a little sweet, pairing beautifully with the carrots and a simple maple-balsamic glaze. Finished with fresh parsley, it’s one of those easy side dishes that brings a little extra color and comfort to the table without asking for much in return.

Ingredients
2 pounds Carrots, cubed
2 cups Kohlrabi, cubed
2 tbsp Maple Syrup
2 tbsp Balsamic Vinegar
2 tbsp fresh Parsley, chopped
½-1 cup filtered Water
32 oz / 907 g
9.9 oz / 280 g
1.4 oz / 40 g
1 oz / 30 g
0.14 oz / 4 g
8 oz / 240 g
Directions
Cut carrots into cubes, triangles, or bite-sized chunks and add to pot with water.
Cover pot and cook over medium heat for about 10-12 minutes.
When carrots are about halfway cooked, add Kohlrabi, more water if needed, and maple syrup.
Cover until cooked fully cooked.
Remove from heat and stir in parsley and balsamic.
Serve and enjoy!
