Golden Creamy Mac

A creamy, flavorful sauce made from simple, whole-food ingredients coats every bite of pasta, creating a meal that’s warm, satisfying, and perfect for sharing around the table. Ingredients

4 cups Yukon Gold Potatoes

2 cups Carrots

16 oz Chickpea Elbow Pasta

3 tbsp Onion Powder

2 tsp Garlic Powder

1 tsp dried Oregano

2 tbsp Nutritional Yeast

1/4 tsp ground Turmeric

1 tbsp Lemon Juice

1/3 cup Vegetable Broth

1 tbsp Parsley

1/2 cup fresh or frozen Peas

1/2 tsp Red Pepper Flakes (optional)

Directions

Steam the potatoes and carrots until cooked (approximately 15 minutes). Set aside.

Bring pot of water to boil, add pasta to boiling water. Reduce to simmer and stir occasionally. Cook to desired firmness (about 7-9 minutes). Add peas to boiling pasta for the last 2-4 minutes. Strain.

While pasta is cooking, create the sauce by adding potatoes and carrots to blender with onion powder, garlic powder, nutritional yeast, dried oregano, ground turmeric, red pepper flakes (optional), lemon juice, and vegetable broth. Blend until smooth and creamy. 

Pour sauce over pasta and peas. Gently fold until well incorporated.

For BAKED Golden Creamy Mac

Preheat oven to 375°F.

Place completed mixture into Pyrex or oven safe dish so it is no more than 1” thick.

Place in oven for 30 minutes or until desired.

Once cooked, plate and garnish with parsley sprigs.
