This refreshing raw salad is a celebration of whole-food nourishment and bold flavors. Tender moringa leaves, crunchy veggies, creamy avocado, and a sprinkle of seeds create the perfect texture mix. The zesty, slightly sweet citrus dressing with hints of ginger and optional turmeric adds a smooth, tangy finish that pulls everything together. It’s raw, it’s colorful, and it’s full of glow-giving goodness. Perfect as a light lunch or a vibrant side dish that supports your body from the inside out.
Ingredients
For the Salad:
2 cups fresh Moringa leaves, stems removed
1 cup shredded Carrots
1 cup Cucumber, cut into small bite-sized chunks
1/4 ripe Avocado, diced
½ cup Red Bell Pepper, thinly sliced and cut into thirds
½ cup Purple Cabbage, shredded
1 tbsp raw Sunflower Seeds or Hemp Seeds (optional for texture)
For the Creamy Citrus Dressing:
3 tbsp fresh Orange Juice
1 tbsp Lemon Juice
1 tbsp Tahini or raw Almond Butter
½ tsp fresh Ginger, grated
1 Medjool Date, pitted and soaked if firm
2 tbsp Water, or more to thin dressing.
Directions
Make the dressing:
Blend all dressing ingredients in a small blender or NutriBullet until smooth and creamy.
Add more water to reach your desired consistency.
Assemble the salad:
In a large bowl, gently massage the fresh moringa leaves by hand for about 30 seconds — just enough to soften them slightly, like you would kale.
Place in bowl and add the remaining salad ingredients.
Toss everything together.
Drizzle dressing over the salad just before serving.
NOTE: Add a pinch of turmeric for an anti-inflammatory boost.
